Mary Palac was born in the Philippines but immigrated to the South Bay as a child. A lifetime of being part of Filipino family organizations helped prepare her to Co-found the Silicon Valley Chapter of the United States Bartenders Guild, with the intention of bringing education and opportunities to San Jose’s thriving cocktail community. She has worked in the service industry for over 15 years, 10 of those years bartending in Downtown San Jose as well as all over the Bay Area. Paper Plane has been her home bar for nearly the past 4 years, during which time she became an alumna of SACC’s Team Taco, the Tales of the Cocktail Foundation CAP Program, won the California Regional of Speed Rack (an all female Speed/Craft Cocktail competition), passed the grueling BAR 5 DAY examination in New York, and most recently won BARMANIA, a charity speed competition held in Las Vegas, NV. In June it was announced that Mary was named a Top 10 National Honoree for American Bartender of The Year through the Tales of the Cocktail Foundation’s Spirited Awards, an award that recognizes the American bartenders who have had the most influence on drink styles and cocktail culture.
