With the exponential growth of the Mezcal category in recent years, we have seen an influx of Mezcals from across Mexico, but overwhelmingly within Oaxaca. This has led to a crowded market, where bar professionals and customers alike may recognize certain regions, but haven’t truly explored what makes the characteristics of these places unique. It’s time to explore the techniques of producers from particular regions and what they have in common.
