A handful of classic cocktails survived the dark ages of the mid-20th century, including the largely-abandoned likes of the Pink Squirrel and the Grasshopper; the still-stalwart Old Fashioned, Martini, and Manhattan; and drinks like the Gimlet, the Sidecar, the Ward Eight, and the Bronx, which were no less prevalent than the Martini at the time, but which are now beginning to fall by the wayside. The seminar examines the remarkably consistent mid-century cocktail menu to investigate why these drinks survived and discusses how that canon informed the early cocktail renaissance. We'll also look into the decline of some of these drinks and taste the recommended versions from some of their most prominent contemporary advocates - e.g., Joaquin Simó's Sidecar and the Employees Only Gimlet.

January 16, 2020 marks 100 years since the inception of Prohibition and the rise of the Rum Runners in the United States. Based on his documentary film entitled “The Real McCoy,” filmmaker and founder of The Real McCoy Rum, Bailey Pryor, takes us on a journey through the history of prohibition in America, how an unlikely combination of political forces managed to proclaim alcohol illegal in the USA, and draws parallels with today's culture and political moment. Famed “Rum Runner,” Bill McCoy, used legal loopholes to defy this unpopular law and confound the US government, becoming a folk hero. He is the reason why we all know the phrase, “The Real McCoy.”

While making the film about McCoy, Pryor located evidence that McCoy was buying his rum from Barbados, where Pryor and renowned master distiller, Richard Seale, came together to re-create The Real McCoy rum. Following the traditional pot-still technique, Pryor takes us through the process of producing rum, from fermentation to distillation, maturation and blending - highlighting a new discussion about rum as a finely aged spirit, rather than just “light” and “dark.” This entertaining and enlightening seminar will give the audience a whole new perspective on rum, and an appreciation for rum as a super-premium product that rivals the finest spirits in the world.

Alcohol, in various forms has been used within medicine as an antiseptic, disinfectant and antidote. The therapeutic use of alcohol is as old as alcohol itself. Through the ages different cultures have embraced, shunned, and revered alcohol.
We want to go in depth and dive into alcohol and its medicinal components. Danny Mena, of Mezcales de Leyenda, will focus on mezcal, as we know that the medicinal use of alcohol is thought to have been widespread in the pre-Columbian Americas, varying with position in society and individual cultures. Pulque and later mezcal are intricate parts of the culture.
We will go into Amaro, as Fabio Parziano of Amaro del'Etna, will talk about how today’s Amari can trace their roots, back to the herbal tonics formulated centuries ago in the monasteries and abbeys across the Italian landscape believed to have restorative or medicinal properties and perhaps as protection against plagues or evil.
We will also talk about present day consumption, beliefs and cocktails and how these contemporary "tinctures" can also offer therapeutic relief!
This discussion will be in conjunction with Gaby Mlynarczyk author of clean + dirty drinking .The book is an exploration of medicinally beneficial ingredients , how they’ve been used in the past and how they can be used in modern cocktail making both used symbiotically with alcohol and without in non alcoholic versions
